Vegetarian Burger Recipe with Chickpeas

Ingredients

• 2 tablespoons olive oil
• 1 small onion, diced
• 1 large garlic clove, minced
• 1 teaspoon ground cumin
• 1 teaspoon ground coriander
• 1/2 teaspoon ground turmeric
• 1/2 teaspoon paprika
• 1 can (15 ounces) chickpeas, rinsed and drained
• 1/4 cup plain breadcrumbs
• 1/4 cup chopped fresh parsley
• 1/4 cup crumbled feta cheese
• 2 tablespoons freshly squeezed lemon juice
• 1/4 teaspoon salt
• Freshly ground black pepper
• 4 hamburger buns
• Lettuce, tomato, onion, and other toppings of your choice

Instructions

1. Heat the olive oil in a medium skillet over medium heat. Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes. 2. Add the cumin, coriander, turmeric, and paprika and cook, stirring, for 1 minute. 3. Add the chickpeas and mash with a potato masher or fork until most of the chickpeas are mashed. 4. Stir in the breadcrumbs, parsley, feta cheese, lemon juice, salt, and pepper. Cook, stirring, until the mixture is heated through, about 2 minutes. 5. Divide the mixture into 4 equal portions and form into patties. 6. Heat a large skillet over medium-high heat. Add the patties and cook until lightly browned, about 5 minutes per side. 7. Serve the patties on the buns with lettuce, tomato, onion, and other toppings of your choice.
